im no expert, and have no idea what size ur tort is, but i always thought you had to feed no more than the size of his/her caraspace?? im sure someone else with more experience will be along.
A good indicator is to set a date each month and weigh and measure her, the general rule is for them to gain about 2-3 grams a month, so after a couple months, you will know if u are feeding too much or to little.
You have the right idea tho with variety, i would only give maybe half a leaf of each one, or even spread it out through out the day. If leaving her outside, i tend not to feed mine myself, i will let her walk around and find what she wants to eat and let her be.
